We are finishing off our list of traditional South

We are finishing off our list of traditional South African dishes with chakalaka, a staple South African dish made from beans, fresh veggies, onions, pepper, and tomatoes.

Ingredients:

- 2 tsp oil,
- 1 chopped onion,
- ½ chopped red, yellow and green pepper,
- 1 tsp grated fresh ginger,
- 1 tsp crushed garlic,
- 2 tsp curry powder,
- 4 grated carrots,
- 1 grated tomato,
- 1 tsp sugar,
- Sea salt and freshly ground black pepper,
- 410g can baked beans,
- Fresh coriander.

Instructions:
1. Heat the oil in a pan and gently sauté the onion and peppers for 1 minute.

2. Add the ginger, garlic and curry powder. Fry until fragrant. Add the carrots and sweat until soft, about 10 minutes.

3. Add the tomato and sugar and season, then cook for a further 10 minutes.

4. Turn off the heat, add the baked beans and stir to combine. Garnish with coriander to serve.

The list of South African classic dishes will not

The list of South African classic dishes will not be complete without Umfino, a traditional Xhoza maize meal cooked with cabbage and leafy greens. Follow the steps below to make your own:

Ingredients:

- Salt to taste
- 360g maize meal
- 4 tsp vegetable oil
- 1 cup thinly sliced cabbage
- 1 sliced onion
- A handful of celery leaves
- 1 large peeled, cooked and cubed potato
- 2 cloves garlic
- 1 cup thinly sliced spinach
- 2 tsp vegetable seasoning

Instructions:

1. Bring 6 cups water to the boil in a large saucepan. Season with salt while whisking, pour the maize meal into the water and stir until the pap is smooth and thick. Add a little extra water if necessary. Allow the pap to reach a stiff consistency and stir once more before reducing the heat. Cook the pap for 25 minutes, covered. Set aside and keep warm until ready to serve.

2. Heat a pan and add the vegetable oil. Sauté the cabbage, onion, celery leaves, potato, garlic and spinach over a medium-high heat, adding the seasoning. Allow the vegetables to soften and caramelise a bit. Check the seasoning.

3. Combine the maize meal with the sautéed vegetables and serve immediately.
